The Story

Organic cinnamon cassia sticks — thick, bold bark curls for mulled drinks, curries and slow infusions.

Cassia sticks are single, sturdy curls of dried inner bark — dark brown-red, rougher and far more robust than the papery quills of Ceylon. The flavour is warm, sweet and pungent, built to survive long simmering, which makes cassia the go-to stick for big-flavoured pots and winter drinks. Cassia is naturally higher in coumarin than Ceylon, so heavy daily users often prefer the Ceylon variety. Certified organic.

Best for

  • Mulled wine, cider and spiced punches
  • Biryani, pilau and rice puddings
  • Robust curries, tagines and chillies
  • Infusing syrups, teas and poaching liquids

FAQ

Cassia sticks or Ceylon sticks? Cassia is a single thick bark curl with a bold, hot-sweet punch and higher coumarin; Ceylon quills are delicate, multi-layered and citrusy-sweet with naturally very low coumarin. See our Organic Ceylon Cinnamon Sticks.

Sticks or ground? Sticks are for infusing and removing — drinks, curries, rice — while ground cassia stirs straight into bakes. See Organic Ground Cinnamon Cassia.

Available in 250g, 500g, 1kg and 5kg packs — from home pouches to bulk sizes for bars, delis and food businesses.
